Premium Vintage Collection
The Premium Vintage Collection is a line of Prosecco Extra Brut, a project to enhance Prosecco that Bottega began developing more than ten years ago.
The decision to use grapes from single vineyards, harvested by hand and cultivated according to sustainable criteria, is the starting point for obtaining sparkling wines of the highest quality.
One of the innovative elements of this line are the fermentation times. For this range of Prosecco in fact, horizontal autoclaves were chosen, which are more suitable for long fermentation. It starts from a minimum of 4 months up to a maximum of 12. The wines thus obtained have a more complex character and greater longevity.
The other major innovation concerns vintages. The Premium Vintage Collection owes its name to the use of different vintages for the 5 Proseccos, with the aim of seeking new and different organoleptic sensations depending on the cru and, indeed, the vintage.
